Black Bean Burgers
These black bean burgers are way better than any you’ll get out of the freezer section! If you have time, double the recipe and freeze the extra patties!
2 cups black beans (drained and rinsed)
½ bell pepper (I like to use ½ green and ½ red)
½ an onion
2 cloves garlic
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon sriacha or hot sauce
½ cup bread crumbs (more if needed)
Prepare a baking sheet with a sheet of parchment paper. Mash beans with a fork until thick and pasty. Use a food processor to finely chop bell pepper, onion and garlic then press gently in a colander to drain excess liquid. Beat the egg in small bowl and add spices and hot sauce. Stir the egg mixture and drained veggies into the bean mixture and then add bread crumbs until the mixture is sticky and holds together (like meatloaf). Form into 4 patties and place on prepared backing sheet. Let sit, covered in the refrigerator for a few hours (or overnight). Bake @375 about 10 minutes on each side.
Serve on buns with any toppings of your choice! I love cheese, chipotle mayo, lettuce, tomato, onion and avocado.
