Peanut Butter Noodles aka Hangover Noodles

Great for a breakfast after a “big night” or a quick and easy dinner.

Ingredients:

½ package angel hair pasta

2 Tablespoons all natural peanut butter

2 Tablespoon Organic Soy Sauce

1 tsp rice vinegar

½ tsp sesame oil

1 tsp sambal oelek

1 tsp or less sugar (to taste)

water

garnish: green onion, fresh cilantro, sesame seeds

optional: steamed or stir fried veggies: broccoli, carrot, cabbage, snap peas

 

Cook angel hair based on package instructions, while draining, add sauce ingredients to the same pot you cooked the pasta in, heating over low heat until well combined. Add a little water or stock to thin the sauce if it’s too thick. Mix in noodles and top with green onion, fresh cilantro and sesame seeds. Feel free to mix in any veggies you like: broccoli, carrot, cabbage..whatevz. Enjoy!
